The Easiest Whole30 Veggie Bacon Frittata

Will I ever want to stop eating eggs for every meal?

 

Whether on Whole30 or not, eggs are one of my favorite meals. Frittatas are one of the best ways to mix up your normal egg routine or serve a bunch of people. I love veggies and eggs together and you can really use any veggies that you have on hand. Literally. Anything. You can also add cheese or use dairy milk to suit your liking but as is, this brekkie is pretty delicious. I cooked mine in cast iron because cast iron is just wonderful and soooo easy, but if you don't have a cast iron skillet, you can 100% use a casserole dish!



 

Whole30 Veggie Bacon Frittata

Prep Time: 15 min

Cook Time: 25-28 min

Serves: 6-8


ingredients

12 eggs

8 slices of Whole30 compliant bacon (mine is from Trader Joe's)

1/2 white onion, diced

3 cups fresh spinach

2 cups kale, rough chopped

1 cup mushrooms, rough chopped

4-5 grilled artichoke hearts, about half a jar

1/2 c almond milk

1t salt

1/2t pepper


instructions

1. Preheat the oven to 350 degrees.

2. In a cast iron skillet or large skillet, over medium heat, cook bacon in batches until crispy. While bacon is cooking, dice up all your veggies. When all pieces are cooked, remove from grease and set aside.

3. Leave the bacon grease in the pan (unless you want to remove some, but I didn't) and toss in diced onion. Cook until the onions are translucent, about 2 or 3 minutes.

4. In a separate bowl, crack all 12 eggs, pour almond milk, and spices. Mix with a whisk or fork until the egg mixture is frothy.

5. Add the rest of the veggies and cook until the greens are wilted. This will happen very quickly.

6. Chop up bacon slices roughly and toss in with the veggies. Stir until incorporated.


if you're using a cast iron

7. Remove from heat and pour egg mixture over the veggies until everything is well covered. I topped with a sprinkle of spinach.


if you're using a casserole dish

7. Remove the veggies from heat and pour evenly into a greased 13x9 or 9x9 baking dish.

8. Pour egg mixture over the veggies evenly until everything is well covered. Sprinkle with spinach.


9. Pop in the oven for about 25-30 min. Until the eggs aren't jiggly and cooked all the way through.
