Dairy Free Grain Free Bacon Chive Biscuits

Pairs incredibly with your favorite soup!

 


 

Once again, the only photos that I took were my instagram pics *yikes* but hey, the biscuit still looks great! These are salty, herby, and yummy. I paired with my creamy sausage autumn soup. Delicious.


 


Dairy Free Grain Free Bacon Chive Biscuits

Makes: ~10


1 c almond flour

1/4 c coconut flour

6 slices of bacon

6 T of reserved bacon grease

1/3 c chopped chives/green onions

1/2t salt

1/4t pepper

1/2t garlic powder

1t dried thyme

1 1/2 t nutritional yeast (optional)

1/3 c almond milk (or any milk)

3/4 t baking soda

1 1/2t baking powder

2 eggs


1. Cut bacon into 1/2-1inch slices and cook in a medium sized pan until crispy. Place the bacon on a paper towel. Drain the bacon grease into a small bowl and set aside (probably in the fridge) to cool. It’s okay if it’s still warm, you just don’t want the grease scalding hot. *you don’t HAVE to use bacon grease here, I just found it convenient and delicious. If you have an aversion to bacon grease, feel free to use butter or ghee*

2. In a medium bowl mix almond milk, eggs, and cooled bacon grease.

3. Add dry ingredients: nutritional yeast, salt, pepper, dried thyme, baking soda, baking powder, and garlic powder.

4. Once your dough is to a thick but still wet consistency (but still if it seems too thick, add more almond milk), fold in bacon and chives.

5. Scoop into a greased muffin tin (fill to about halfway).

6. Bake at 350 for 18-20min. Enjoy!
