Dairy Free, Grain Free, Refined Sugar Free Lemon Bars

Perfect for springtime!

These bars are ~absolutely~ divine. They've been dubbed by my friends as the best dessert that I've made. I can't argue with that! These are the perfect spring/summer treat and truly make me want to lay in the grass and soak up the sun until I turn into a spring flower. Dramatic? Maybe. Anyway, they're lovely!


 

DF GF Refined SF Lemon Bars

Prep time: 15 min

Cook time: 20-30min


Crust

1/2 cup coconut flour

1/2 cup almond meal

1/2 cup coconut oil

1/2 t salt

1/4 c coconut sugar


Filling

1/4 cup coconut flour

1/4 cup cassava flour

2 eggs

1/2 cup coconut sugar

1/2 cup maple syrup

1/2 cup lemon juice (about 4 or so lemons)

2 T lemon zest

pinch of salt


1. Begin with crust. Melt coconut oil in the microwave or over stovetop until completely melted.

2. Mix the melted coconut oil with coconut flour, almond meal, and salt. Press into a 9x9 pan or a loaf pan. Once packed tight, bake at 350 degrees for 7 min. Set aside to mix filling.

3. Zest your lemons until you have 2T of zest, then cut and juice the lemons until you have 1/2 cup of juice to use.

4. Combine eggs, maple syrup, coconut sugar, and lemon juice.

5. Add wet ingredients to dry (cassava and coconut flour).

6. Finally, add lemon zest and salt.

7. Thoroughly combine until batter is the consistency of peanut butter.

8. Pour over crust and bake at 350 for 20-30 min until a tooth pick comes out clean.
