Blood Orange Chocolate Chip Buttermilk Loaf

A mouthful to say but ohhhhh so delicious!

 

Lately, I've gotten my parents hooked on blood orange margaritas which means we constantly have blood oranges in the house. With the rainiest of days here in a while, I decided to use up some of our stock pile to make this fluffy, citrus-y, and chocolate-y combination. I love blood oranges. They're a little sweeter than navel oranges with a deeper flavor. The best part, however, is their gorgeous red color. Makes for quite a pretty glaze and a danger to staining whatever you're wearing (I made the mistake of wearing white today).


Despite the staining dangers, this recipe is pretty simple, pretty delicious, and checks off all the flavor boxes. I want to eat it for breakfast! I want to eat it with my afternoon cup of tea! I want to eat it after dinner or sneak a bite before bed! Pound cake-y deliciousness that will be gone before you know it.

Cook Time: 35-40min


ingredients

1 cup sugar

1/2 cup butter, softened

2 eggs

1 teaspoon vanilla

6 tablespoons buttermilk

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon of blood orange zest (half orange)

1/2 cup chocolate chips


glaze

3/4 cup powdered sugar

1/2 tablespoon buttermilk

1/4 vanilla

3-4 tablespoons of blood orange juice (one orange)

1. Using a standing mixer or hand mixer, cream together butter, vanilla, and sugar until fluffy.

2. Slowly add eggs while mixing on medium speed and thoroughly combine for 2 minutes.

3. Stream in buttermilk on low speed until completely combined.

4. In a smaller bowl, combine flour, baking powder, baking soda, and salt.

5. Pour dry ingredients into the wet mixture, one cup at a time, while mixing on a low speed.

6. Fold orange zest and chocolate chips into the batter.

7. Pour into a greased or parchment lined loaf pan. Bake at 350 degrees for 40-45min or until a tooth pick comes out clean.

8. For the glaze, in a small bowl combine powdered sugar, blood orange juice, zest, buttermilk, and vanilla. Whisk together until smooth and creamy.

9. After your loaf has cooled (about 30 min), pour glaze over the top. Slice and serve!
